Quick & Delicious Maple Syrup Cake

Oftentimes it is easy to get into a routine with familiar food products in your kitchen. Peanut butter only goes on sandwich bread, or orange juice is only served at breakfast. Recently, I was reminded of this when I discovered my favorite bottle of Vermont maple syrup. Maple syrup is just as delicious baked into a cake as it is served on top of pancakes. This easy, moist cake is a perfect example. My friends and family love it.

MAPLE SYRUP SNACK CAKE
Makes 16 servings

1 cup maple syrup
1 cup reduced-fat sour cream
¼ cup butter, melted
1 large egg
1 teaspoon vanilla extract
2½ cups all-purpose flour
¼ cup walnuts, chopped (optional but recommended)
1 teaspoon baking soda
½ teaspoon salt

Frosting
1½ cups confectioners sugar
2 tablespoons maple syrup
1 tablespoon whipping cream
1/8 teaspoon salt
¼ cup walnuts, chopped (optional but recommended)

1. Preheat the oven to 350 degrees F.

2. In a medium bowl, whisk together the syrup, sour cream, butter, egg, and vanilla.

3. In a large bowl, combine the remaining dry ingredients. Stir in the syrup mixture to the dry ingredients and blend well. Pour batter into a greased 9-inch square baking pan.

4. Bake for 30 minutes. Check the center with a wooden toothpick for doneness.

5. Remove from oven and let cool.

For frosting: beat the ingredients in a medium bowl with an electric mixer on a low speed until smooth. Spread frosting evenly over cake, sprinkle with nuts and serve.
