Easy Banana Salsa for Summer

There was a time when the only salsa you could find was the traditional tomato-based salsa. Not anymore. Now there is a wide variety of popular fruit salsas, like mango and peach, for all of us to enjoy. Here's one that you may not have tried and is a perfect accompaniment to summer meals -- grilled meats and seafood. And it goes equally as well with a big bowl of your favorite tortilla chips.

BANANA SALSA
4 bananas, chilled, cut in half lengthwise and chopped into ½-inch pieces
½ cup red bell pepper, cored, seeded, and finely chopped
4 teaspoons fresh mint, finely chopped
2 tablespoons fresh ginger, grated
2 tablespoons fresh cilantro, chopped
2 tablespoons brown sugar
2 tablespoons fresh lime juice
2 teaspoons extra virgin olive oil (I prefer Lucini brand.)
2 green onions, finely chopped
Salt to taste

Refrigerate the bananas for at least I hour. In a large bowl, combine all ingredients except the bananas. Once bananas are chopped, add to bowl and blend gently. Serve.
