hannasgymstrings: Reheating Mac N' Cheese with a little milk works well. But you should never, ever put plastic over something before you stick it in the microwave, esp plastic wrap! An article on Yahoo just a few months ago pointed to the fact that bits of that plastic melt and drip into your food...can we say cancer risk?

"nickimattoon" i'm SO relieved i'm not the only one that will not eat "processed cheese product", (which is what velveeta and most american cheese singles say on their labels) that does not have to be refrigerated! it makes me nervous too. i also refuse to feed that garbage to my son. you can get REAL american cheese from your deli that melts well and tastes 100% better. it's more expensive but it's better than eating the fake stuff. i would never have thought to use cottage cheese but i think i will try it...

I like my cheese STRINGY. But the absolute best M&C is getting some Argo cornstarch, follow the yellow cheese sauce recipe, and boil up some elbows. Then you add a little sauce, elbows, and grated cheese, in nice, thin layers, in a baking dish. Put it in a 350 degree oven until the top is nice and crispy!!!! YUM!!! THis is so awesome if you put them in mini round 'souffle' dishes. Perfect serving size.

Thanks for the recipe! My husband and boys loved it. I normally make my mac & cheese with a cheese sauce and crumbs, but this was a nice change, and easy to make, and it saved me time by not having to make the white sauce, I baked mine for 50 mins, at 350 and it was perfect, very creamy, and not dry at all. Thank again!

I made this tonight and it was great. I added bleu cheese instead of the swiss because that is what was in the fridge but it was a hit. Don't ruin it be using low fat cheese! Adjust your diet for a few days to allow for this delicious treat.

I saw this recipe and decided to make it...before I realized how fattening it is! I am still going to try it, but I am using gluten free pasta (as I have ciliac disease) and am going to try and use all low fat cheeses. Who knows, could be good, could be awful....thanks all for the "no swiss" tip.

Yes, it's a heaping spoonful fat-fest, but the taste is great! I was also nervous about the whole cottage cheese thing...but it melts down and adds a touch more texture/sharpness/creaminess to the mix. A resounding endorsement was my friend's teen daughter having second helpings...and she doesn't eat anything!
Like all things, it's best in moderation. It freezes great into individual heat-n-eat servings and is very flavorful, very versatile (I have tried with Gruyère, asiago in place of swiss) and SUPER simple - takes about 5 minutes to assemble (after noodles are cooked). Enjoy and lighten up! (Figuratively, in this case...)

The Best Macaroni & Cheese I have had my Mom made, she would boil the elbow macaroni & then layer it in a Casserole Dish,
Macaroni Layer, then Stewed Tomatoes, then American Cheese Slices, last layer should end with Cheese, then she would sprinkle Bread Crumbs over the Top Layer and Dot with pieces of Butter & Bake in the Oven. It was Delicious

I made this recipe for my church. They loved it. The only thing that I did different was that I put in one cup of mild cheddar cheese and one cup of extra sharp cheddar cheese, instead of the two cups of extra sharp cheddar cheese. This recipe made my dish the talk of the day at fellowship dinner. Thanks for sharing this recipe. I will recommend it to all of my friends.

I have to start out saying. I am not a expert at cooking. I actually just started cooking...okay trying to cook. I am getting better at it. I actually really enjoy it. But I am still very new at it. I am always looking up recipes and came across this one when asked to bring mac n cheese to an office lunch. And I must say this was a hit with everyone in my office. And so easy to make. I will definitely make this again. Thanks!!!
