Velveeta is REALLY unhealthy! Real cheese itself is iffy if you are trying to eat heart-healthy - but Velveeta is out of the question. It reminds me of the kinds of ice cream you can put in a dish and come back later and it still hasn't melted! Pure chemicals - read the label!

I always make my homemade mac and cheese with 3 or 4 cheeses...I hate cottage cheese but it may be a nice change that adds some moisture to the dish. Don't hate til you try it.

It looks interesting. I'll have to try it. As far as nesmiths recipe(from the south) ....sounds like the same thing you get from a box of velveeta mac and cheese...ew

I mix one bar of extra sharp cheddar, one bar of munster, and a package of mozzarella part skim small package. Pour over al dente cooked elbows add milk until you see it come up to top not too soupy salt and pepper and bake at 350 until the top gets crusty and golden brown.

You people that talk about velveeta are NUTS!
That's not even cheese, is processed salty garbage. I'd eat this recipe any day before I'd even go near velveeta!
Real mac and cheese is the best on a cold night. I'd try this recipe just because it's slightly different than others I have made.

Mac & Cheese is supposed to simple and taste good
Cottage cheese, sour cream and all that salt, Yuck
I'll stick with my wife's, which is only cheddar, macaroni, milk and cheezit's crumbled on top MMMM good

For the love of god, why are Americans always coming up with more and more excuses to f***ing stuff their faces with more calorie and fat-laden foods. This time the excuse is because it's winter goodness. How about a grapefruit and some diet pills, instead, eh?
And as for the author, "Art"-- as kind and lovely as your article is-- and you are-- you could stand to stay away from the Homemade Mac and Cheese through the holiday season.

don't knock it until you try it. the recipe can be quite glorious, even though you may not like cottage cheese or sour cream. don't be afraid to try it because of the ingredients. tisk-tisk. a kitchen never evolves if it is never introduced to new things. speaking of new things, a good idea for experimentation would be to steer clear of that velveeta-processed-plastic-block-spread. it's horrible for your health and it's basically what they put in the boxed mac-n-cheese. not really a cooking adventure.
