A Birthday Cake Even a Kid Can Make!

For those parents who've gotten their kids interested and participating in the kitchen, congratulations. The next dilemma is of course whether a particular recipe matches a child's skills and age, because a child who wants to help in the kitchen will only be frustrated if they're told they can't.

If your child is old enough and has mastered basic cooking skills under supervision, perhaps it's time to introduce them to the joy and satisfaction of scratch cooking. I was shown this recipe when I was a boy and wanted to make a birthday gift for a family member. I think it's a great one for kids for several reasons:

  • It has few steps, so it keeps their attention and boosts their confidence
  • It's a simple "one-bowl, one-pan" recipe
  • It's chocolate cake!

In fact, a family member's birthday is an ideal time to suggest this recipe to the child who likes to cook. While you're at it, give them the freedom to decorate their masterpiece with whatever frosting or icing they choose -- and with other edible decorations from home or the store. Both you and your child will be extremely proud of their accomplishment -- and of course, again, everyone wins, right? Because did I already mention we're talking about chocolate cake here? (Wait -- did I already tell you how much I like chocolate cake?)

[INSERT YOUR CHILD'S NAME]'S CHOCOLATE CAKE

Serves 12

4 ounces unsweetened baking chocolate, chopped or broken into pieces
1/4 cup unsalted butter, softened
1 2/3 cup boiling water
2 1/3 cups all-purpose flour
2 cups sugar
2 eggs
1/2 cup sour cream
1 teaspoon vanilla extract
2 teaspoons baking soda
1 teaspoon salt

Preheat oven to 350 degrees F.

Grease and flour a 9-x-13-inch baking pan. In a large mixing bowl (to save time, just use the bowl that attaches to your countertop mixer), combine the chocolate, butter, and water. Stir until the chocolate is completely melted. Add the remaining ingredients and beat at low speed with an electric mixer until smooth.

Pour batter into the prepared pan.

Bake 35-40 minutes, or until a wooden toothpick inserted in the cake's center comes out clean.

Remove from oven and completely cool cake in the pan on a wire rack. Add frosting and decorations of your choice, then serve.

    I think it's a fantastic idea to bake a birthday cake together! I would suggest an alternative of just whisking the batter smooth which might make the cake a little less fluffy but will empower the little chef to do the "whole thing" without the use of gadgets. Cake recipes like this one are easily made into cupcakes by reducing the baking time. The only thing I disagree with is the age to start "scratch cooking" I think as early as possible! --Joanne www.ForkandBottle.com

    if you leave out chocolate will you have plain white cake or would you have to add something different?

    Um...reality check: Almost any cake can be made with this simplicity and within this amount of time.

    Nice and easy. You can substitute splenda in an equal amount for the sugar. Maybe even substitute a healthy oil for the butter although I haven't tried that yet.

    For those can have sugar, substitud it for Splenda it works same way and has good tasted.

    Also, since this recipe is targeted at kids, isn't it a P in the A to use chopped unsweetened chocolate instead of cocoa powder?

    Ummm I don't know how the chocolate would melt (when mixed with the butter and water) if you didn't put it in the microwave or heat up over a stove. Please clarify?

    Thanks for this wonderful recipe! My son has recently shown interest in helping me in the kitchen and this recipe is so simple, it would be a great way to encourage more cooking or baking together without stressing out about the mess afterwards!

    This looks like an excelent recipe for any body that wants to bake somthing that didn't come in a ready mix box and spend some time with the kids. Seriously why do people have to nit pick these things?

    Considering I made a batch of raspberry thumbprint cookies from scratch with a group of two-year-olds, (I helped mix and read the recipe to them, but they pretty much did the rest), I don't think a child has to be very old to cook from scratch. If this recipe introduces kids to the joys of cooking, great. (I probably won't be using it, though as it is a little bit too unhealthy to pass muster for my class.)

    This is a good recipe, but I think missing two important points: 1. There is no mention of what to do with the eggs :) 2. A really important aspect of baking is how to check when the batter is actually ready to go into the oven. That should definitely have been mentioned, especially since this is targeting first time bakers. Just my 2 cents. Thanks, - Onkar
