The Perfect Fall Fruit Dessert

This warm apple dessert is a fine way to enjoy seasonal apples. It's also a good recipe to keep on hand around the holidays (here before you know it!) since it's a great way to use up leftover cranberry sauce. You can also try making it with sliced Comice or Anjou pears instead of apples -- or mix the two fruits. With the topping, this will remind you of a cobbler.

APPLE-CRANBERRY PUDDING
Makes 4 to 6 servings

1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/8 teaspoon salt
6 Golden Delicious apples, peeled, cored, and sliced
1 cup whole cranberry sauce
1/2 teaspoon ground cinnamon
2/3 cup granulated sugar, divided
5 tablespoons (1/2 stick plus 1 tablespoon) unsalted butter, at room temperature
1 large egg, beaten
1/3 cup whole milk
1/2 teaspoon vanilla extract
Vanilla ice cream for serving

Position a rack in the center of the oven and preheat oven to 350 degrees. Lightly butter an 8 x 8-inch glass or ceramic baking dish.

Whisk the flour, baking powder, and salt together. Set aside.

Mix the apples, cranberry sauce, cinnamon, and 1/3 cup sugar in a medium bowl and spread in the baking dish.

Beat the butter and remaining 1/3 cup sugar in a medium bowl with an electric mixer on high speed until light and fluffy, about 2 minutes. Beat in the egg. Gradually stir in the flour and the milk and vanilla to make a thick batter. Using a rubber spatula, spread the batter over the apples.

Place the baking dish on a baking sheet or aluminum foil to catch any juices. Bake until the apple juices are bubbling and the topping springs back when pressed in the center, about 40 minutes. Serve warm with vanilla ice cream.

    I live in Ohio and we are huge on apples especially at the end of September and Mid-October. When I tried this I felt like I was a kid again, visitng my grandparents on their farm durring fall. Thanks for the recipie.

    Oh, I can't wait for my apple trees to get big enough to produce fruit for this yummy-sounding dessert. *sigh* I'll have to settle for store apples in making this dessert.

    I can't wait to get in the kitchen and make this. I love apples and cranberries so I can only imagine that this dessert will be absolutely phenomenal. I love this time of year, gives me the perfect excuse to make the best food year round. Victoria C., I hear ya, store bought apples just don't taste the same as those in your backyard. I plan to use ours but unfortunately we don't have a bog so I guess I'll have to buy the cranberry sauce. Happy eating all!
