My family has been making this cake for generations. We use the pineapple juice and all..It has always been my childrens favorite as 11 x 13 with or without icing. I think it's supposed to be 1 tsp soda & 1 tsp salt.

check out other Hummingbird recipes, They do not call for baking powder. Only baking soda and salt . I believe that was a typo. Here's one from allrecipes.com:
* 3 cups all-purpose flour
* 2 cups white sugar
* 1 teaspoon baking soda
* 1/2 teaspoon salt
* 1 teaspoon ground cinnamon
* 1 1/4 cups vegetable oil
* 3 eggs
* 1 (8 ounce) can crushed pineapple with juice
* 2 cups diced bananas
* 1 cup chopped pecans
* 1 teaspoon vanilla extract

Thanks for the ingredient suggestions! I had never heard of Hummingbird cake and wanted to trying baking it until I noticed the recipe errors. I am going to give it a try.

I've been making this cake for years. I use the self-rising flour so don't put any salt or baking powder in it but I do use about 1 cup of pecans in my cake. I also use a box of powdered sugar for the icing in addition to the cream cheese, butter & vanilla.

This is a great cake, I have it in a number of cook books. You can get the correct recipe, including a lighter version at: Southern Living site. It has been in their monthly recipe book and the 1990 'Annual Recipes'.
To the lady who wrote the INCORRECT stuff about Starbucks; please go to Snopes.com and read the TRUTH about this Malicious Urban Legend..It is # 8 under '25 Hottest Legends'
The e-mail has now been changed to villify a different company with the same charges. Maybe you don't know it, but you can lose your posting rights for posting malicious stuff about others (even companys); especially if it isn't true.
I will not report you for abuse, IF you revise your post and change your charges.

If you read the third paragraph of the actual recipe, it says
"Sift the flour, sugar, baking soda, cinnamon, and salt into a bowl."
Note the word SALT. It's obviously 1 tsp salt.
Um, duh?

Can't wait to try this recipe and make it a family favorite.As far as the typo... if you know your way around the kitchen and baking, you can figure out the ingredients!!!! Get past that issue and try the recipe.

Would really have liked to see a photograph included of the finished product. Cake does sound refreshing! Off topic, about the Starbucks Iraq statement...TOTALLY UNTRUE. If you do an internet search on the subject you will find out that this was just another one of those forwarded e-mails that made the rounds to everyones inbox and is totally unfounded. Best to verify before you pass it on: )
