Amazing Discovery: The Grilled Cheese Cheeseburger

At A Hamburger Today, we have formulated what we're calling a Hamburger Fatty Melt.

Lemme give you the smack on this meat stack. From top to bottom:

  • Grilled cheese sandwich as bun top
  • Four-ounce beef patty
  • Grilled cheese sandwich as bottom bun

Got that? It's a burger with two grilled cheese sandwiches as its bun.

I wish our R&D department here at A Hamburger Today headquarters could claim this as the product of our grease-addled minds, but we're only following through on a burger we heard about via a Serious Eats reader who mentioned the "Chubby Melt" at the Mossy Creek Cafe in Fisherville, Virginia (a burger between two grilled cheese sandwiches, smothered with sautéed onions and mushrooms and topped with Thousand Island dressing).

I vowed to recreate one of my own, but with some tweaks. I thought Mossy Creek pretty much had it right until it ladled on the toppings. Something as glorious as a burger with TWO GRILLED CHEESE SANDWICHES AS ITS BUN needs little else adorning it.

So stop what you're doing right now and go out and get the following ingredients:

  • 1 pound ground beef
  • Pepperidge Farm Very Thin white bread
  • Kraft Deli Deluxe American cheese slices-yellow, not white, fool!
  • Butter
  • A juicy tomato

Here's the full recipe for the Hamburger Fatty Melt.

Check out the ultimate deep-fried burger here.

Back in Rhode Island there is a restaurant called Newport Creamery. They make such a sandwich and I used to eat it regularly--piled with ketchup, relish, mustard, and pickle slices--oh yeah!

Too bad he's not a fan of loading up burgers. In Atlanta, at a place called Vortex, they have a "Double Bypass Burger" - it has grilled cheese sandwiches as buns, two patties, 4 slices of bacon, 4 slices of cheese and a fried egg. Now that's a serious sandwich.

Here in East Texas we have eaten these for years. We call it a "Patty Melt". It's typically served with must/mayo, grilled onions and grilled mushrooms and a heaping of seasoned spicy fries. DELICIOUS!

But for the Patty Melt we just use 2 slices of bread, not four. Butter one side of both slices, enclose all ingredients including chhese which should be on each slice of bread and grill all at once as you would a grilled cheese sandwich.
