i have a mixture of spices (garlic, celery, italion seasonings, chili,paprika) i use for the flavor of the burger not just salt and pepper and i mix it in when forming the patty this way it has a slight hint of seasonings in addition to the other things on the burger

I flour both sides before frying... and i add my spices and seasonings to the flour it makes the juicy stay inside while giving the outside a slightly crispy texture and the seasonings stay in the burger and not drain out with the fat.

This is the worst idiodic article I've ever seen. What kind of pretentious idiot would be so worried about buying regular old ground beef, like people have been doing for a hunded years. No seasoning?? Sounds pretty bland to me. Add water??? waste of time. How did an idiot like this get an article on here when there are plenty of great burger recipes out there?

Can't imagine turning a burger or steak every 30 sec, goes against all I ever learned about cooking meat. Having your beef ground special is absurb, No butcher department is going to sell contaminated beef on purpose. Even special grind could be contaminted and cost way more.

-- You better salt the meet when it is cooked. Salting it before, takes out the "real" taste of the meat...
-- If you need to add water to the meet to make it "a superior, succulent, juicy, crumbly (which, Steingarten discovered, is a good thing) burger" means that the meat is not good enough... Adding water (or cream !!!) to fresh beef is really a weird idea far from culinary standards...

try frozen patties from costco, marinate them in beer and worchester sauce for a good time.. then pour it on whislt cooking.. minced garlic and steak seasoning is also a must.. flip the burger only once when the fat runs down the onto the grill.. that will be the best burger u ever had. and it was easy as #@$(*!

And I guess my ancestors came out of the trees earlier than most. I like my meat cooked. I don't want blood, or even pink.
(I may not be too bright, but I know what I like!).
