I add a touch of olive oil instead of the water. The burger seems to hold together better with a softer touch. I also toast the outside of the rolls in the same fry pan near the end of cooking the burger. The heat softens the inside of even slightly stale rolls.

If you ever feel like experimenting a little. I have found that mixing three tablespoons of A1 sauce, two tablespoons Heinz 57 sauce, one tablespoon spicy mustard and 1/2 tablespoon Tabasco sauce into 1 pound of ground sirloin really adds a unique yet very tasteful burger.

Ok, I just tried your technique with a bit of skepticism, because that's what I do, and I can't even describe how great my burger just turned out!! I usually douse with tons of ketchup. Didn't even need it, actually, it would have spoiled it. By the way that was made with just plain ‘ole store bought ground beef. Thanks so much!

I like thick hamburgers sometimes, but other times a burger that's pressed thin and a little crispy around the edges hits the spot. The best kind is whatever you're in the mood for.

I wish Steingarten had said whether he tasted these burgers drunk or sober. Have you ever seen him as a judge on Iron Chef. He also looks and sounds like he's in the bag.

Try using a little beef broth instead if water. it really punches up the flavor. Freshly Minced Parsley is really great mixde in with your burger as well!

Jeffrey Steingarten is a fat slob... he is definitely the man who ate everything: garbage he finds on the street, small dogs, young children and plenty of donuts and pizza. I wish he'd go back to europe and get off our tv
